DESCRIPTION


Cool SmartYeast® is a unique strain of yeast combined with the fermentation process of cream yeast, making it more resistant to the freezing process. Cool SmartYeast® optimizes performance, without dependence on sugar in lean doughs to the point where sugar can be removed from a formulation when only 2-3% is usually included. At the same time, it remains fully active when a higher level of sugar is needed. Cool SmartYeast® performs remarkably well in almost all forms of frozen dough.

STORAGE


• Shelf life is 21 days if kept below 45°F. for optimum performance.
• Yeast temperature should be maintained at 45°F. or below at all times.
• Optimum cooler temperature is 36° to 40°F. with good air circulation.
• Once opened, store in a cooler and keep bags airtight.
• Rotate inventory.
• Do not freeze.
