The so-called yeast foods consist of a blend of ingredients which fulfill at least three important functions in doughs: (1) they serve as yeast nutrients; (2) they serve as oxidizing dough conditioners; and (3) they serve as water conditioners, mainly in waters which are too soft or too alkaline.
