Comprising engineers and university researchers, Lesaffre Development reflects the Group willingness to operate an applied research policy to capitalize on the knowledge stemming from basic research.

The research and development work has profoundly changed the Group's activities, especially as far as the fermentation techniques and processes are concerned. The control of fermentation processes, and the adaptation of production equipment to local raw materials such as cane molasses, or sugar/corn hydrolysates have contributed to a high level of production flexibility on a global scale.
